Our fastest growing Jonah Crab meat variety is our claw, knuckle and arm meat. Each Jonah Crab has two claws, which are connected to its body via the knuckle and arm. After cooking and cooling, these three components are "scored" - placing a very narrow and shallow cut in each section so the shell can easily be removed and the meat exposed. This meat is then carefully removed in a manual process.
This meat is then sold in two different forms:
1. Mixed Meat is a combination of the claw, knuckle and arm meat. It has a stronger crab flavor than leg meat while still retaining its sweetness. Due to the different components that are used, the shape of the Mixed Meat pieces is variable but all nicely sized.
2. Arm Meat is one of the components of Mixed Meat. It also has a stronger crab flavor than leg meat while still retaining its sweetness. It is becoming increasingly popular due to its consistent rectangular shape. Many of our customers see it providing the best of both worlds - the sweetness and stronger crab flavor of Mixed Meat with the consistent shape of Leg Meat.
Mixed Meat and Arm Meat are available, fresh and frozen, in 5 oz., 6oz., 8oz., and 16oz., containers. Mixed Meat is also available frozen, in 2 pound bags. The containers can be printed with food safety and nutritional information for direct sale to consumers or in food service containers. Lids for these containers can use the New England Crab Company logo and information or can be customized for private label situations. The 2 pound bags are for food service applications.
