The larger pieces of meat in the crab bodies and remaining meat in the crab claws/knuckles/arms become crab salad. This product is used in a variety of further processed products (such as crab cakes and crab rangoon) and is also combined with leg meat, mixed meat and/or arm meat to create a combination meat product that has a broad array of uses. After the salad meat is removed from the Jonah Crab bodies, any additional meat is removed by another automated process which produces Mince Meat. This product is composed of smaller/finer sized crab meat pieces and has more of a slurry consistency. This product is used as an ingredient in crab cakes and other further processed products, as well as in soups and sauces.
One of our most popular products is our Blended Salad, which combines our Jonah Crab Body Salad with a small proportion of Mince Meat. This adds enhanced crab flavor to the end product without changing the consistency of the overall formulation.
Salad Meat is available, both fresh and frozen, in 8oz., and 16oz., containers as well as frozen in 5 pound and 10 pound bags. Mince Meat is only available frozen, in both 5 and 10 pound bags. Our Blended Salad is also available only in a frozen state - in 2, 5 and 10 pound bags. The containers can be printed with food safety and nutritional information for direct sale to consumers or in food service oriented containers. Lids for these containers can utilize the New England Crab Company logo and information or can be customized for private label situations.
