After the back-shell, claws/knuckles/arms and legs are removed from cooked crabs, the crab body remains. The crab body, as described previously, can be processed for Crab Salad and Mince Meat. Recently, many of our customers have purchased crab bodies prior to this further processing for use in their operations - typically when producing soup/bisque stock and sauces where crab flavor and added protein is required. The crab meat remaining in the bodies has a good crab flavor and is easily integrated into our customer's processing.
